FLIA

Fli or Flia is a traditional Albanian food, the flija is cooked more in the northern areas of Albania such as Kukësi and from Kosovo where the area that prepares it best is that familys from Rugova!

It consists of flour, milk, cream, butter, salt and oil.

It is usually served or consumed with homemade cheese and yogurt!

Sacrifice is thought to be a very old food since the Illyrian period. It is said that it was cooked on March 14 for the summer day as a sacrifice to the God of the Sun, since the laying of the noodles on the fli is symbolic of the shape of the Sun’s rays, as well as the name “fli” means immolation or sacrifice.

 

Leqenik(cornbread)

Leqeniku (also known as proja or kellana e kallamoq) is a dish of Kosovar and Balkan cuisine, made with corn flour, baking powder, sunflower oil, water (carbonated or still) and salt. In some countries and variants, other ingredients can be added, which are usually eggs, milk or its products and any of the green vegetables.

It was a very popular food in times of widespread poverty, mostly before the 1950s, and still remains a common and frequent or even daily meal.

 

 

 

Perpeqi

Perpeqi is a type of traditional and old Albanian food which is usually made with noodles, eggs and milk, but once instead of milk, cow pasture was often used. In some parts of our country, the mixture may also include cheese, sour cream, butter or margarine and possibly other ingredients.

Usually, only one large dumpling is placed on the baking tray where the prepared mixture is poured. Then two, three or four are thrown as desired. The excess part of the noodle that comes out of the pan is wrapped around the inner edge of the pan circle and then baking is done. Roasting can also be done as if sleeping where it turns out tastier.

Pitja(byrek)

Pitja, also piteja, is a kind of thin pie with iç among the usual and favorite Albanian noodles. In Kosovo, pies are a traditional dish that is cooked in every home.

The food is made with dough noodles, which are filled in the middle with onions, meat, spinach, cheese, cream and yogurt, etc. Any vegetable can serve as an ingredient for pitja.

 

 

Stuffed peppers

Stuffed peppers are a common dish in many cuisines. It consists of hollowed or halved peppers filled with any of a variety of fillings, often including meat, vegetables, cheese, rice or sauce. The dish is usually assembled by stuffing the hollows of the peppers and then cooking. Otherwise they are also called Dollma” Dollma is a family of filled dishes from Ottoman cuisine that can be served warm or cold. Some types of dolma are made with whole vegetables, including whole peppers. Today, dollma is found in the kitchens of the Balkans, the South Caucasus, Central Asia and the Levant, as well as the family kitchens of Sephardic and Iraqi Jews. Dollma dishes are found in Balkan, Caucasian, Arab, Israeli, Turkish and Central Asian cuisine and were historically part of the Ottoman palace kitchen. The word dolma of Turkish origin means “stuffed”.

 

As the main dish, usually the most traditional Kosovar ones are Sausage and Lamb meat!
